Kanzhu Hand-Pulled Noodles has a history of more than 300 years, and its origins can be traced in Lanzhou, Kanzhu Province, China. During the Qing Dynasty some century ago, a young Hui man of Muslim ethnicity by the name of Ma Bao Zi created a dish, which we know now as Special Braised Beef Noodles. Back then, life in China was very harsh, and as a way of life, Ma would cook his special braised beef noodles at home, carry in onto his shoulders and walk around the city to sell. His flavor was well accepted, and his noodles attracted so much fame among locals. Later on, Ma created a special clear soup to accompany his braised beef noodles, by mixing beef broth with lamb bones, liver, and special herbs and spices. His clear soup creation immediately drew cravings from the people, and in time, he opened his first restaurant which he offered free clear soup for everyone who entered. Soon, Ma’s special Braised Beef Noodle Soup became renowned all over the province. His son eventually took control of their business and improves the quality and flavor of the noodles until it became popular everywhere, leading to eventual growth of thousands of beef noodle restaurants in the province. At present, Kanzhu Hand-Pulled Noodles is found not only in Kanzhu Province, but in all corners of China. Due to the vast scope of its popularity, Kanzhu Hand-Pulled Noodles is labeled as the “No. 1 Noodles on Earth.” |
